The lobster rice
It is the house's most requested dish. It starts from a home-made seafood stock made daily with the heads and shells of the produce that arrives from the market, and it is finished soupy, the way it has always been eaten in this part of the countryside.
The lobster arrives alive and is prepared to order. That's why the rice needs between 35 and 45 minutes from when it's ordered, and why it's best to order it when booking rather than deciding once you're already seated.
